A wonderful expression of bright, elegant fruit with generosity and a real character which underpins the best of our beautiful region.The exceptional climate and legendary soils of the Languedoc make a wonderful marriage and birth place upon which great wines can be produced. This is an emblematic expression not only of the Pinot grape variety, but of premium wine from the South of France. WINEMAKER'S NOTESThe average yield is 25 hectolitres per hectare. After "green harvesting" in June, the grapes are picked in late September when they have reached perfect ripeness.The grapes are de-stemmed (separated from their stalks) and then placed in vats to macerate for 10 to 15 days. The pumping-over and maturing processes ensure that the "best" of the skins are extracted before pressing. Ageing takes place partly in 225-litre barrels, after which the wine is bottled.TASTING NOTESThis 100% Pinot Noir comes from vineyards set at altitude, among the coolest in the region. This fruity wine offers aromas of ripe cherry, wild raspberry and spices. The tannins are silky and the finish elegant and well-balanced. Serve at 16 C with grilled lamb, chicken tajine or mature cheeses.
