IGP Pays d'Oc ChardonnayDESCRIPTIONPrima Nature is a range of wines without added sulphur or any other additives. Each wine is unique and expresses all the original character of its fruit and terroir. The wines are grown using sustainable methods and have been awarded Terra Vitis accreditation.TASTING NOTESThis wine is blessed with a beautiful, light robe shot through with flashes of gold. A Chardonnay which is fresh, and elegant with delicious hints of white flowers and citrus scents. VINIFICATION AND MATURINGThe vinification process is very complex, especially since we do not use sulphur or other additives. The grapes are immediately pressed, with cold must settling in order to encourage the oxide compounds in the must to stabilize naturally. Alcoholic fermentation is very quick, and takes place in a controlled environment. During fermentation the temperature is restricted to 18C. The wine is purified by racking, before malolactic fermentation and a further racking phase at controlled temperatures. The wines are bottled relatively early, to preserve their fullaromatic character. The wines continue to mature in the bottle.∗ FOOD AND WINE PAIRING ∗Serve at 12C as an aperitif, withfish, shellfish or white meat.
