This is an emblematic expression not only of the Sauvignon grape variety, but of premium wine from the South of France. WINEMAKER'S NOTESHarvesting takes place in mid September when the grapes are perfectly ripe. Fermentation is conducted under temperature control. Part of this wine is matured in 225-litre Bordelaise barrels for around four months, and the other part in vats. After a light fining operation, the wine is kept in bottles for several months.TASTING NOTESFresh and flavoursome, this 100% Chardonnay comes from the coastal vineyards offering fresh notes of citrus, ripe apple and white flowers. Maturing in barrels gives it notes of toast and hazelnut. Overall it is well-balanced, providing both freshness and minerality.Serve at 10C-12C with scallops, fish in sauce, poultry, and risottos.
